LAGANSALA (Vegetables Cooked in Spicy Gravy)

Serves: 5-6 People

Time Required: 30 Minutes


1. 100gm carrots, cubed;

2. 2 sweet potatoes, cubed;

3. 100gms french beans, cubed;

4. 100gms green peas;

5. 2 medium potatoes, cubed;

6. 3 big tomatoes;

7. 2 medium sized onions;

8. 1tsps ginger garlic paste;

9. 1/2 tsp coriander ½ tsp cumin powder;

10. ½ tsp turmeric powder ;

11. ½ tsp chilly powder.


1. Fry each vegetable separately, keep aside.

2. Puree tomatoes in a blender.

3. Chop 2 medium sized onions and fry till a translucent color. Add ginger garlic paste and cook over medium heat.

4. Pound cardamoms, cloves, cinnamon together and put into the pan.

5. Add turmeric, chilly, cumin and coriander powder, and fry well (if the powdered spices stick to pan add little water

6. Add tomato puree, salt, sugar and vinegar. Add vegetables and cook for a while.

7. Serve hot garnished with fresh coriander.
